


Dough
200 gr. plain flour
3 table spoons of Due Vecchi cocoa
2 eggs
1 table spoon of icing sugar
Filling
75 gr. Venchi dark chocolate 56%
50 gr. of ricotta cheese
3 table spoons of caster sugar
zest of orange
Garnish
Cyprus salt
frozen berry mix
ice cream

Begin to make the dough with flour, two mixed eggs, cocoa, sugar
and warm water as needed.
Knead the dough until you get a homogeneous mixture. Form two thin
sheets with the rolling dough machine or a
rolling-pin.
Melt the chocolate with bain-marie and in a mixing bowl
combine it with ricotta cheese, sugar, orange zest. Place a
teaspoon of mixture on the sheet (see here) cover with other
sheet and form the "raviolo" with a pasta cutter.
Drop the
ravioli into boiling water for 7 minutes and drain them. Sauté
the tortelli in a pan with a table spoon of honey at medium heat
for 30 seconds.
Serve straight away with ice cream and frozen "berry mix" and if
you want to try something new add Cyprus salt flakes.
